Bread Maker Chocolate Chip Sourdough recipe

A chocolate-chip sourdough has been on my radar for a while, thanks to r/Sourdough. Col was aghast but quickly came around. After several experiments with savoury sourdough inclusions (hard recommend), it seemed rude not to try a sweet version.
What a beautiful loaf, even if it did slope on one side, thanks to a steep drop in temperature and an open window*. I don’t always know what to do with sweet, white loaves. Of course, they can be sliced and frozen, but turning them into a bread and butter pudding is lovely (and freezable too). I use roughly 1 egg, 200 ml of milk and ½ a tablespoon of sugar per 150 g bread, plus a good splash of bourbon.
* Sloped bread can sometimes be caused by not enough water in the recipe, but mine’s usually down to the weather. When I move my bread maker away from the window, I get a more even rise.
Notes
Feeding the starter
I feed my sourdough starter overnight, using a 1:10:10 ratio so it rises slowly. By the morning, it will have peaked and fallen. It’s not necessary to use the starter at its peak. If you want a faster rise, use a different ratio. 1:1:1 (35 g each of starter, water, flour) will peak in about 4 hours for me.
Dispenser warning
The Panasonic manual says that cheese and chocolate shouldn’t be placed into the raisin and nut dispenser as they could melt and get stuck. I haven’t experienced this, but I do lightly dust any sticky or heat-sensitive inclusions with flour as a precaution.
Be mindful of your bread pan
Some people believe that sourdough can wear down non-stick coatings over time. It's not a given, but bread pans are expensive to replace. If you’re concerned, there are plenty of non-sourdough recipes on this blog.

Makes: 1 loaf
Ingredients
Sourdough starter
- 5 g sourdough starter
- 50 ml water
- 50 g bread flour (I use 35 g white, 15 g rye)
Chocolate chip bread maker sourdough
- 80 g fed sourdough starter
- 400 g strong white bread flour (plus 1 tsp for dusting)
- 7 g salt (I use kosher. Reduce for table or sea salt)
- 10 g sugar
- 10 ml oil (I use olive)
- 240 ml water
- ½ tsp dried yeast (I use Allinson's)
- 100 g chocolate chips (I use 70 %)
Method
Sourdough starter (see notes)
- Add 5 g of starter, 50 ml of water and 50 g of bread flour to a jar. I use 35 g of white flour and 15 g of rye. Stir well, loosely cover, and leave somewhere warm to rise. This 1:10:10 ratio rises slowly - perfect for overnight.
Bread maker chocolate chip sourdough
- Put the regular blade into the bread pan. Add 400 g of white bread flour, 7 g of salt, 10 g of sugar, 10 ml of oil, 240 ml of water and 80 g of fed sourdough starter into the bread pan, then place it into the bread maker.
- Add ½ teaspoon of yeast to the yeast dispenser.
- Dust 100 g of chocolate chips with 1 tsp of flour. Add to the raisin and nut dispenser. Select the basic raisin setting (or basic white if not using the dispenser).
- The programme will take around 4 hours. If your machine doesn’t have a dispenser, add the chocolate chips three quarters of the way into the knead (on my machine, that's 22 minutes in). Once the programme is complete, shake the loaf onto a rack and allow to cool before slicing. If the loaf won’t come out, leave for 5-10 minutes, then try again.
