Why?
Col’s type 1 diabetic and takes insulin for every meal so this will be a huge time-saver for us.
At the moment we don’t include nutritional info (calories, fat, sugar, protein, etc) because of time constraints and concern over miscalculating.
Nutritional info can vary between brands, even for the same ingredient
Take the carbs per 100g for bags of ground almonds (plucked from the Ocado website):
M&S: 9.3g
Ocado: 6.9g
Whitworth’s: 6.9g
Minton & Donello: 6.5g
Daylesford: 6.2g
Crazy Jack: 8.7g
Our carb count will be based on the ingredient quantities listed (despite me not always following them closely) and the brands we typically buy. If you use this info too, make sure to perform your own calculation as our figures might not be accurate for you.
Quick custard recipe
Okay, enough admin. Here’s a Bird’s custard powder recipe that we regularly pour over muffins to eat for dessert. It makes less than half a pint and the carbs total to 15g (plus 20g for these berry muffins), so 35g per person.
Use whichever milk you like. My preference is for a little full-fat dairy, mixed with plant milks (goat, oat and soy).
Type 1 diabetes has changed how we eat. It’s ever-evolving and there’s constant trial and error. We love carbs, so finding dessert recipes that don’t cause gigantic blood glucose spikes always feels like a win.

Quick Bird's Custard

Serves: 2
Ingredients
- 10g Bird's custard powder
- 1g sugar (or more to taste)
- 225ml milk or milk alternative (I use 75ml each of goat, oat and soy)
- a splash of vanilla extract (optional)
Method
- Add 10g of Bird's custard powder and 1g of sugar to a small saucepan.
- Add 225ml of milk (any kind) and a splash of vanilla extract (if using).
- Stir until the custard powder dissolves then heat until steaming and just starting to bubble. Taste and add more sugar if needed. Serve immediately over a baked good of your choice (usually muffins for us).
