A banana-free carrot, orange and ginger smoothie with lemon or lime.

This simple, 4-ingredient smoothie comes alive with ginger and citrus. For extra fibre, add the whole fruit rather than just the juice. The ginger is peeled, chopped and frozen by Ocado (or any of the big supermarkets). It couldn’t be more convenient. 

I chuck the ingredients into my Vitamix E310 and it blends the carrots beautifully; no straining or juicing needed so all the fibre remains in the smoothie. I’ve thought about fibre a lot since learning about its many benefits

This looks like a summery drink but I make it all year round. It’s an energising pick-me-up and a great way to use up any carrots that are languishing in the fridge.

Notes

I occasionally replace the ice with frozen mango or pineapple if I want a sweeter smoothie.

Ingredients

Carrot, orange and ginger smoothie

  • 2 large carrots, roughly sliced (or 4 small ones)
  • 2 clementines, peeled (or satsumas, tangerines, etc)
  • 1 lime, peel removed, cut into wedges (or ½ a lemon)
  • 1 tsp fresh ginger, chopped (I use frozen)
  • 1 tsp psyllium husk (optional)
  • handful of ice cubes
  • 150ml water (more if needed)

You will need

  • a powerful blender (I use a Vitamix E310)

Method

  1. Add 2 large roughly sliced carrots, 2 peeled clementines, 1 lime (peeled and cut into wedges), 1 teaspoon of chopped ginger (I use frozen) and 1 teaspoon of psyllium husk (optional) to a high-powered blender.
  2. Add a handful of ice cubes and 150ml of water. Blend until smooth, adding more water if needed, then divide between two glasses.
