If the weather’s hot and you’re bored of water, a green juice can be really appealing. I bought one on holiday and the juicer made me laugh. It took in a huge amount of fruit and veg, extracted a decent cup of liquid and pooped out an enormous pulpy log. Normally I’d lament the loss of fibre but I was too hot to care.
This recipe sort of makes that juice but with nothing taken out. I use my Vitamix E310, which results in a foamy topped liquid that separates if left for more than 5 seconds. Honestly, I love it. It’s my favourite “I’m hot and thirsty but don’t want water” drink.
Notes
Keep the skins on the fruit and veg for extra fibre.

Green Juice (Apple, Cucumber, Spinach, Mint and Lemon)

Serves: 2
Ingredients
Green juice
- 2 small green apples, cores removed
- 2 inch chunk of cucumber
- small handful of fresh spinach (the kind that doesn't need to be cooked)
- 2 stalks of mint with leaves
- juice from ½ a lemon (or lime)
- 200ml water
- 12 ice cubes
You will need
- a powerful blender
Method
- Add 2 small green apples (skins on, cored removed), a 2 inch chunk of cucumber, a small handful of spinach and 2 stalks of mint with leaves to a high powered blender (I use my Vitamix E310).
- Squeeze in the juice from ½ a lemon, add 200ml of water and 12 ice cubes.
- Blend for a minute or so until smooth. Pour into glasses and drink immediately.
