Panasonic Bread Maker 100% Rye Loaf and 50/50 Rye and White recipe

A 100% dark rye loaf, plus a rye and white loaf, made in a Panasonic bread maker.

Rye is a dense flour but oh-so tasty. I didn’t expect a great rise but the recipe in the Panasonic manual produces a sunken loaf. Rye contains less gluten, so it’s not surprising, but I’d hoped for a square loaf at least. 

When I reduced the water and yeast I got a better result:

  • Water: 440 ml → 420 ml
  • Yeast: 2½ tsp → 2 tsp

It still sank a little (photo 1) but not as much as the first loaf (photo 2).

Sinking aside, the loaf tastes great either toasted with butter, or topped with creamy scrambled eggs and salmon. Rye and white is more aesthetically pleasing but again, I get a better shape with 20 ml less water. The recipe from the manual turns out wavy and uneven.  

I’m working my way through the various rye loaves in my Panasonic manuals. The newer YR2540 manual has just two recipes: 100% rye and rye and white. The SD2512 manual has a few more, some of which sound exciting (rye and stout!). I'll post these forgotten rye loaves on the blog and YouTube in the upcoming months.

I used Marriage's dark rye flour for the loaves in the photos.

Original quantities from the Panasonic manual:

100% rye: 440 ml water, 2½ tsp yeast

50/50 rye and white: 360 ml water, 2 tsp yeast

Panasonic Bread Maker 100% Rye Loaf and 50/50 Rye and White

Makes: 1 loaf

Ingredients

100% rye loaf

  • 500 g rye flour (I use dark rye)
  • 2 tbsp oil (I use extra virgin olive oil)
  • 2 tsp sugar
  • 2 tsp salt
  • 420 ml water
  • 2 tsp dried yeast

Rye and white loaf

  • 250 g rye flour (I use dark rye)
  • 250 g strong white bread flour
  • 2 tbsp oil (I use extra virgin olive oil)
  • 2 tsp sugar
  • 2 tsp salt
  • 340 ml water
  • 1½ tsp dried yeast

Method

100% rye loaf

  1. Put the rye blade into the bread tin. Add 500 g of dark rye flour, 2 tablespoons of oil (I use extra virgin olive), 2 teaspoons of sugar, 2 teaspoons of salt and 420 ml of water into the loaf tin then put it into the bread maker.
  2. Add 2 teaspoons of yeast to the yeast dispenser and select the rye setting. The programme takes 3 hours 30 minutes. When the timer sounds, shake the loaf onto a rack and allow to cool before slicing.

Rye and white loaf

  1. Put the rye blade into the bread tin. Add 250 g of dark rye flour, 250 g strong white bread flour, 2 tablespoons of oil (I use extra virgin olive), 2 teaspoons of sugar, 2 teaspoons of salt and 340ml of water into the loaf tin then put it into the bread maker.
  2. Add 1½ teaspoons of yeast to the yeast dispenser and select the rye setting. The programme takes 3 hours 30 minutes. When the timer sounds, shake the loaf onto a rack and allow to cool before slicing.

You can delay when the bread maker will finish by up to 13 hours. If the loaf won't come out of the pan, leave it for 5-10 minutes then try again.
