Panasonic Bread Maker Maple and Pecan Half Wholemeal Loaf recipe

A half white, half wholemeal, maple syrup and pecan loaf, made in a Panasonic bread maker.

This loaf is so soft and delicious, and it’s half wholemeal. Maybe it’s because I’ve made so many rye loaves recently, but I just cannot get over the texture of this bread. The maple syrup flavour comes through but it’s subtle. You could increase it to 4 tbsp* for more oomph. Using a high quality maple syrup will help too. Mine’s from Farmfoods and it’s cheap and cheerful, but slightly lacking in flavour.

Something that took me by surprise: this loaf is surprisingly versatile. Unlike a sultana loaf, which I generally just toast and butter, this one works well with sausage and eggs for breakfast**, or soup and sandwiches for lunch.

**Can I just talk about how much I love Linda McCartney’s red onion and rosemary sausages? We’re omnivores but love a veggie sausage, especially for breakfast. Some, like M&S’s Plant Kitchen mushroom sausages, are on the greasier side (similar to pork). Some are drier, like Linda’s. I don’t enjoy the original sausages one bit but the rosemary variation is great. I was so happy when I discovered the bigger value pack of 10; for a mere 50p extra, you get 4 more sausages.

Notes

 The original recipe specifies 280 ml of water. This makes the top of the loaf wrinkle. Reducing the water by 10 ml helps a little but 20 ml would probably be better (I haven't tried this yet).

Panasonic Bread Maker Maple and Pecan Half Wholemeal Loaf

Makes: 1 loaf

Ingredients

Most bread makers

  • 200 g strong wholemeal bread flour
  • 200 g strong white bread flour
  • 20 g butter
  • 3 tbsp maple syrup
  • 1 ½ salt
  • 270 ml water (or 260 ml, see notes)
  • 75 g pecans, chopped
  • 1 tsp dried yeast (I use Allinson's Easy Bake)

SD-PN100

  • 125 g strong wholemeal bread flour
  • 125 g strong white bread flour
  • 15 g butter
  • 2 tbsp maple syrup
  • 1 tsp salt
  • 175 ml water
  • 50 g pecans, chopped
  • 1 tsp dried yeast (I use Allinson's Easy Bake)

Method

  1. Put the regular blade into the bread tin. Add 200g of wholemeal flour, 200g of white flour, 20g of butter, 3 tablespoons of maple syrup, 1 ½ teaspoons of salt and 270 ml of water into the loaf tin (see notes regarding water). Put the tin into the bread maker.
  2. Add 75 g of chopped pecans to the raisin and nut dispenser then add 1 teaspoon of yeast to the yeast dispenser. Select the whole wheat raisin programme:
    • SD-YR2550: menu 9
    • SD-YR2540: menu 9
    • SD-YR2530: menu 9
    • SD-ZB2512: menu 7
    • SD-PN100: menu 4 (I would use whole wheat rather than basic raisin. The pecans need to be added manually.)
  3. The programme will take 5 hours. You can delay when the bread maker will finish by up to 13 hours. When the timer sounds, shake the loaf out onto a rack and allow to cool before slicing.
