Panasonic Bread Maker Olive and Oregano Loaf recipe

A versatile, savoury loaf made with wholemeal and white flour. Great dipped into balsamic vinegar and olive oil, dunked into soup, or turned into sandwiches or toasties.

A recent cold robbed me of energy to make my weekly sourdough loaf. I could do no more than throw ingredients into my bread maker; this loaf fitted the bill perfectly. 

Use any ratio of wholemeal to white flour. I go for three quarters wholemeal, or even 100% if I’m using Marriage’s golden wholegrain. You could make a 50/50 loaf, or all white, if you prefer.

Notes

Don’t make my mistake: the original recipe specifies 75g of olives but I find that stingy. I doubled it, packing the olives into the dispenser. When the cycle completed, most of the olives were still in the dispenser. I should know better. 100g is a better amount. 150g is fine, as long as you’re around to check that the olives actually make it into the bread pan. On my machine (a brand new YR2540 - exciting!), this happens 1 hour and 17 minutes into the cycle, when the timer shows 3:43.

Medium is the only size option for this loaf.

The timer can be set for up to 13 hours.

Makes: 1 loaf

Ingredients

  • 75-100g pitted olives, diced (I use green and black)
  • 200g strong wholemeal bread flour (or any ratio of wholemeal to white)
  • 200g strong white bread flour
  • 1 tsp sugar
  • 3 tbsp olive oil (I use extra virgin)
  • 1 tsp salt (I use 1 heaped kosher)
  • 1 tbsp dried oregano
  • 270ml water
  • ¾ tsp dried yeast

Method

  1. Medium loaf: Put the blade into the bread tin. Dice 75-100g of pitted olives (I use green and black) and add them to the dispenser. Don't put the dispenser into the machine just yet.
  2. Add 200g of strong wholemeal bread flour, 200g of strong white bread flour (or any ratio of wholemeal to white), 1 teaspoon of sugar, 3 tablespoons of olive oil (I use extra virgin), 1 teaspoon of salt (I use 1 heaped teaspoon of kosher salt), 1 tablespoon of dried oregano and 270ml water. Put the bread pan into the bread maker.
  3. Put the fruit and nut dispenser into the machine. Add ¾ teaspoon of dried yeast to the yeast dispenser.
  4. Select the Wholemeal Raisin setting, which takes 5 hours:
    • SD-ZB2512: programme 7
    • SD-YR2540: programme 9
    • SD-YR2550: programme 9
    • SD-R2530 programme 9
  5. Set the size to M. You can delay when the bread maker will finish by up to 13 hours. When the timer sounds, shake the loaf out onto a rack. If it won’t come out, leave for 5-10 minutes. Allow to cool before slicing.
