Panasonic ditched a bunch of rye recipes in their latest bread maker manual. My old manual lists:
- 100% rye
- Rye and white
- Rye and wholemeal
- Rye and stout
- Seeded rye
The new manual for my YR2540 only contains the first two. I love flipping through my old bread maker manual. It’s got over 60 recipes for loaves and 27 for dough. The new one has around half the amount; it’s nowhere near as fun to browse.
Rye and stout
The recipe specifies 100% rye flour but I prefer this as a 50% rye, 50% white loaf. The taste of stout is subtle, possibly because I use low alcohol Drop Bear. A 100% rye loaf made with Guinness 0.0 didn’t taste overtly stout-y either.
Rye and wholemeal
This loaf turns out flat, just like 100% rye. I was hoping it would dome like rye and white, but with all the fibre and reduced gluten, it’s too big an ask.
Personally, I prefer the flavour of rye without wholemeal but this is a perfectly serviceable loaf, especially with soft, creamy toppings like scrambled eggs and salmon.
The other forgotten loaf: seeded rye
See the second picture (oh dear). It could absolutely be my error, but it’s basically the 100% rye loaf, with an additional 8 tablespoons of seeds and 10 ml less water. My 100% rye loaves turn out fine now that I’ve tweaked the water and yeast. This seeded loaf though. I have no idea how to save it. Rye often rises then collapses a little. This one didn’t rise at all.
The new manual contains a white seeded loaf with 5 tablespoons of seeds. The bigger seeds (pumpkin, sunflower and linseed) go into the raisin and nut dispenser. This means that the ingredients get a good mix before 60% of the seeds are added. I bet that helps the rise out. Panasonic's rye programme doesn't open the raisin and nut dispenser and I don't fancy adding the seeds myself. I ended up throwing the seeded loaf out but I'm not complaining. It's the first fail I've had in years, since that one time I forgot to add the yeast.
Notes
If using alcoholic stout, make sure to use 50% stout, 50% water, as alcohol can inhibit the yeast.
I use Marriage's dark rye flour.
Original quantities from the Panasonic manual:
Rye and stout: 360 ml water, 2 tsp yeast
50/50 rye and wholemeal: 380 ml water, 2 tsp yeast

Serves: 1 loaf
Ingredients
Rye and stout
- 250 g rye flour
- 250 g strong white bread flour
- 2 tbsp oil (I use olive oil)
- 2 tsp sugar
- 2 tsp salt (I use kosher)
- 170ml stout (can use 340 ml stout if alcohol free - see notes)
- 170ml water
- 1½ tsp dried yeast (I use Allinson's Easy Bake Yeast)
Rye and wholemeal
- 250 g rye flour
- 250 g strong wholemeal bread flour
- 2 tbsp oil (I use olive oil)
- 2 tsp sugar
- 2 tsp salt (I use kosher)
- 360ml water
- 1½ tsp dried yeast (I use Allinson's Easy Bake Yeast)
Method
Rye and stout loaf
- Put the rye blade into the bread tin. Add 250 g of rye flour (I use dark rye), 250 g of strong white bread flour, 2 tablespoons of oil (I use olive), 2 teaspoons of sugar, 2 teaspoons of salt and 170 ml of stout and 170 ml of water (or 340 ml alcohol-free stout, see notes) into the loaf tin then put it into the bread maker.
- Add 1½ teaspoons of yeast to the yeast dispenser and select the rye setting. The programme takes 3 hours 30 minutes. When the timer sounds, shake the loaf onto a rack and allow to cool before slicing.
Rye and wholemeal loaf

You can delay when the bread maker will finish by up to 13 hours. If the loaf refuses to come out of the pan, leave it for 5-10 minutes then try again.
