Yoghurt with Dates, Pecans and Cacao Nibs recipe

Because we eat dessert every single day, I look out for recipes that aren’t super sugary. Fruit with yoghurt and granola is a staple but we often run out of fresh fruit before our weekly grocery delivery. Sometimes I use frozen, or I make this recipe, which mostly involves store cupboard ingredients. 

The yoghurt is flavoured with vanilla paste. A small jar is pricey but lasts for ages. It’s easier to use than its equally expensive brother, vanilla extract. The latter always dribbles down the bottle whereas a spoon will fit into the wide-mouthed vanilla paste jar. It drizzles beautifully and there’s no waste because you lick the spoon afterwards (you have to; it’s the law). 

Notes

The yoghurt in the photo is layered with nuts, dates and cacao nibs. Layering requires more bowls, so more washing up. In reality I chuck everything on top of the yoghurt, stir it and eat. It doesn’t make for a very appealing photo though.

Yoghurt with Dates, Pecans and Cacao Nibs

Serves: 1

Ingredients

  • 100g yoghurt (I use full fat goat’s yoghurt)
  • ¼ tsp vanilla paste (plus more to drizzle)
  • 2 pitted dates
  • small handful of pecans (or almonds)
  • 1 tsp cacao nibs

Method

  1. Add 100g of yoghurt to a small bowl or jar. Mix in ¼ teaspoon of vanilla paste.
  2. Chop 2 pitted dates and a small handful of pecans. Scatter over the yoghurt, add 1 teaspoon of cacao nibs and drizzle over a little vanilla paste.
  3. Stir and eat immediately.
