A friend bought me M&S's Colin the Caterpillar brownie baking mix for my birthday. Just empty the contents into a bowl, add four beaten eggs, 150g of melted butter, stir and bake. The brownies are really good although I don’t dare look at the sugar content.
I bought an extra bag of Colin’s Greatest Bits (“all your favourite bits of Colin”). It didn’t contain a single face! Thankfully the brownie jar came with twelve. Most of the chocolate speckles went into the batter and the faces and shoes adorned the top. Adorable.
The jar says to use a 24cm square tin but I don’t own one and refuse to buy one. It would take up half the kitchen. I like a taller brownie anyway so I used my 20cm tin.
I baked the brownies at 170°C for 40 minutes in a fan-assisted oven. After 30 minutes the centre was uncooked. After 40 it had cooked all the way through. No one complained but 35 minutes is probably the sweet spot if you want gooey brownies.
Somewhat related; I didn't think the Colin Instagram account could get any better but then it started featuring dogs delighting in their plush Colin pet toys. Glorious.
