Pinch of Yum's BBQ Salmon Bowl with Mango Avocado Salsa

I love the Pinch of Yum website. Every time I visit I never fail to find something I just have to try and the photography is gorgeous; vibrant and colourful with a distinctive style.
Pinch of Yum has blogging and photography tips, which is how I came across it in the first place, but it’s the recipes and writing that keep me coming back. The site’s updated a lot so there’s always something new.
I’m pretty sure my jaw actually dropped when I saw the BBQ salmon bowl with mango avocado salsa recipe as it’s my idea of food heaven. I’ve been cooking it over and over and our kitchen is never without mangos or avocados ripening and waiting to be turned into an amazing salsa.
I make a few tiny tweaks: I use honey instead of brown sugar in the spice rub because the brown sugar I have is a bit gritty and I pan fry the salmon, removing the skin and frying it separately as I can never let a delicious ingredient go to waste (thank you, Jamie Oliver).
The whole recipe takes no more than 20 minutes to cook and cold leftovers make the BEST packed lunch. I should say that it’s probably a good idea to eat this outside of the office as the smell of onions seemed to permeate every inch of the fairly small office I work in. I thought the salmon would be the issue (yep, I’m the inconsiderate colleague who has occasionally taken fish into the office) but I’ve discovered that fish at room temperature is generally undetectable. As soon as you stick it in the microwave, though, beware the wrath of your colleagues.
